چکیده

Streptocus tmophilus, as a species designation (Orla-Jensen, 1919), has included those members of the nonhemolytic streptococci that possess the unusual combination of characteristics of extreme salt sensitivity, nonobligate thermophily, a rigorous fermentative pattern with respect to certain sugars (Sherman, 1937), and, based upon attempts to culture on synthetic media, a notoriety for nutritional fastidiousness that exceeds that of Streptococcus pyogenes. In recent studies concerning the nutritional demands and synthetic capabilities of several cultures as circumscribed by the above mentioned cultural characteristics, we believe that we have acquired sufficient data to provide nutritional evidence as an aid to and as a criterion for the recognition of Streptococcus ermophilus as a valid species.

Plasmid transfer via transduction from Streptococcus thermophilus to Lactococcus lactis.

Using Streptococcus thermophilus phages, plasmid transduction in Lactococcus lactis was demonstrated. The transduction frequencies were 4 orders of magnitude lower in L. lactis than in S. thermophilus. These results are the first evidence that there is phage-mediated direct transfer of DNA from S. thermophilus to L. lactis. The implications of these results for phage evolution are discussed.

Here is presented the whole-genome sequences of Streptococcus thermophilus strains MTH17CL396 and M17PTZA496, isolated from fontina protected designation of origin (PDO) cheese in the Valle d'Aosta Region (Italy). S. thermophilus is a lactic acid bacterium widely present in dairy products, and these are the first publicly available genome sequences of S. thermophilus strains isolated from cheese.
